Amatriciana
An intense and flavorful sauce, where crispy guanciale meets tomato in a perfect balance of sweetness and saltiness. The result is full-bodied and rounded, with a slightly spicy note that rounds out the flavor.
Amatriciana originated in Amatrice and is one of the symbols of Lazio cuisine, famous throughout Italy.
Ingredients
Serves 2- 280g MDP Amatriciana sauce
- 300g pasta
- 2 tablespoons extra virgin olive oil
- Black pepper (optional)
- Pecorino cheese (recommended)
Method
- 1Heat the oil in a pan over medium heat.
- 2Add the MDP Amatriciana sauce and stir.
- 3Let it heat for 6 to 8 minutes over low heat.
- 4Cook the pasta and drain it al dente.
- 5Toss the pasta in the sauce for 1 minute.
- 6Sprinkle with pecorino cheese.
- 7Finish with black pepper to taste.
